Let's face it. Sometimes you just need a chocolate "fix." When that craving hits, I always pull out this recipe. No baking. No waiting. Just pure, wonderful, sweet satisfaction. Sorry, I don't mean to wax poetic. But when we're talking about chocolate, I just can't help myself.

Quick-Fix Cookies

1 stick butter
3 Tbsp cocoa powder
2 cups sugar
1/2 cup milk
1/2 cup peanut butter
1 tsp vanilla
3 cups oats

Stir and bring to boil first four ingredients. Let boil for two minutes--NO MORE! Add peanut butter, vanilla, and oats quickly. Stir to combine and then spoon out onto wax paper or aluminum into cookie-sized mounds. Allow to cool and enjoy!

I bet it is 3 TBSP cocoa powder. I have had these before and they are awesome!

no bake cookies are some of my favorites. I just hate to have to wait for them to cool. I like the idea of eating them warm over vanilla ice cream. I just may try that.

G'day, mate! Sorry, I know you must get sick of that. One stick of butter is eight tablespoons, or about half a cup, or a quarter of a pound. Beyond that, I can't help you too much.

I grew up with this recipe, the cookies are really good. There is an amazing variation though with just peanut butter, no chocolate. I like them better than these, I found the recipe on allrecipes.com. If you search peanut butter no bake cookies you should be able to find them. Just make sure to use creamy pb. ENJOY. They are truly amazing!!!
