Pesto Chicken

4-6 Chicken Breasts
1PKG. prepared pesto
1 jar roasted red pepper
2 cups shredded Monterey Jack Cheese
Ground peppercorn
Preheat oven to 350. Slice uncooked chicken breast lenghtwise and fill with scoop of pesto, 1 strip of roasted red pepper, and handful of cheese. Line stuffed breasts in Pam sprayed baking dish and sprinkle with ground peppercorns. Bake for 45 minutes or until chicken is done. Best served with pasta or rice.
