Orzo with Spinach

This week I tossed some ingredients together to make a light summer salad that was satisfying and delicious. I didn’t know how yummy it was going to be until my husband snatched up a third bowl and exclaimed that it was addictive. Then I went to the fridge to grab some around 10pm that night. Lo and behold! None left!! If you make this, I would highly suggest doubling up.
1 lb orzo, cooked and drained
4 cups baby spinach leaves
1 red pepper, chopped
1 small red onion, chopped
6 oz. crumbled feta cheese
1/2 cup of your favorite Greek dressing
salt, pepper, and parsley to taste
Combine all ingredients in a large bowl and enjoy.
