Nicky's (or is it Nick's) Monster Cookies

When my nephew was in kindergarten, he brought home a recipe from school for "monster cookies." Personally, I'm not too sure what was so "monstrous" about them except for the fact that it was Halloween and the teacher needed to come up with some kind of theme activity. 

Back then, my sweet little nephew was called "Nicky." Now, since he is all grown up and mature and stuff, he had decided to drop the "y" and don the moniker, "Nick." I guess that's what happens when you go to college, do astrophysics-y kinds of stuff, and legally get to drink fancy wines called port. To me, he'll always be Nicky. I even call him that to get under his skin on occasion. But I have evidence. Right here in black and white. He signed the recipe that he gave me. Albeit, it was over sixteen years ago, but it's evidence just the same!

So, here's the coveted Monster Cookie recipe. Interpret the "monster" part however you want; but there is no question that these will be one of your favorite cookie recipes. Oh, and I modified it a bit. I added 1/2 cup of flax meal. The collective digestive system of NIcky's kindergarten class would have thanked me for it!

Ingredients
3/4 cup butter (melted)
1 egg
1/4 cup water
1 tsp vanilla
1 cup brown sugar
1/2 cup white sugar
1 tsp salt
1/2 tsp baking soda
1 cup flour
1/2 cup flax meal
3 cups quick-cooking oatmeal
1 small bag of M&Ms

1. Mix butter, water, vanilla, and egg until foamy.

2. Mix in brown sugar, white sugar, salt, and baking soda until creamy.

3. Mix in flour, flax meal, and oats. Stir in M&Ms.

4. Bake at 350 degrees for 10 minutes or until golden.

5. Don't call me "Nicky."

These are wonderful! I made them this afternoon and used chocolate chips because we didn't have any M&M's. We have to rush after the kids get off the bus to make it to dance class on time and this was the perfect snack for on the way to hold them until we got back home for dinner. My kids LOVED them! They ate all of the ones I took with us and then beg for more while I was cooking dinner....even my super picky eater. Thank's so much for a recipe I know I will be making over and over :)
