Mug Cake

My daughter, Kelsey, came across a recipe for a chocolate cake in a mug that you cook in the microwave. Well, being old school like I am, I immediately dissed the idea that anything scrumptious could come out of a microwave. But, being the stubborn gal she is, she proceeded to make it.

The girl proved me wrong.

Of course, let me add that she made up a frosting for the cake and then covered that frosting in caramel syrup. True, she went a little overboard, but I think she was hormonal or something. Don't ever let a hormonal woman get too close to chocolate (or just stand back if she does)!

Here's the recipe for the Mug Cake. You can enjoy as is, or drizzle some chocolate syrup over it. I tell you what, Mama. If you are craving chocolate and only have a few minutes, then this is your fix! Also, it only makes enough for one hormonal woman (or two women who like to pick at sweets and pretend they never indulge...). If you make it, you better have plans to hide it and eat it in secret.

We made some modifications on Kelsey's recipe. Plus, she accidentally dripped chocolate frosting on it (it just looks especially loved to me).

Chocolate Mug Cake

4 Tbsp flour
4 tbsp sugar
2 Tbsp cocoa
sprinkle of cinnamon
1 egg
3 Tbsp milk
3 generous Tbsp oil
3 Tbsp chocolate chips
splash of vanilla

In a microwave safe mug, mix together the dry ingredients. Mix in the eggs. Mix in the milk and oil. Add chocolate chips and vanilla. Mix together and cook in the microwave for three minutes. When you take it out, turn it upside down on a plate and drizzle on syrup if you want (hahahaha...IF you want).

why take it out of the mug. Just eat it straight out of the mug and save on dishes. Just be careful, it stays hot longer in the mug.
