Honey Ginger Dump Chicken (or Tofu)

I've declared this summer as the "slow cooker summer." With all the hanging out we do at the pool, the last thing I want to do is heat up the kitchen with some knock-down, drag-out dinners. I'm going to put that slow cooker to good use, yessiree!

And I'm starting with some dump recipes.

If you're new to dump recipes, all that means is that it is a recipe that contains a few ingredients and you dump all of it in a plastic freezer bag, mix it together, and then freeze or toss in a slow cooker. When you make a dump recipe, it's a good idea to triple or quadruple your ingredient list so you can prepare three or four family meals and stash some away in the freezer.

Since I'm a vegetarian, I replace the chicken or other meat with firm tofu, seiten, or even a veggie chicken product. It's all good.

So try out this recipe for Honey Ginger Dump Chicken and let me know what you think!

Ingredients:

4 Tbsp chopped red onion
2 Tbsp honey
1 Tbsp soy sauce
1 Tbsp minced ginger
1 tsp minced garlic
2 Tbsp apple cider or apple juice (the rest of the juice that was left in the cup after your kid didn't finish it--DON'T WASTE ANYTHING!)
1/4 cup chives

Add above ingredients to about 1 1/2 pounds of chicken in a gallon-size plastic freezer bag. Mix it up then freeze or dump in the slow cooker.

Sounds good! My husband loves the succulent chicken recipe in your No Stress Cookbook, he was bragging about my cooking to all the guys at work, so thanks! LOL This sounds similar to that, now I am going to see if he might like veggie chicken, why not give it a try, right?
