Crazy Easy Dump Chicken

Remember when I said that I declare this summer as "slow cooker summer?" Well, that means resorting to my collection of dump recipes.

Here's one recipe that I am almost hesitant to include on my website because it is so crazy easy. I guess at times I feel like I need to put this touch of professionalism to the stuff that I post, like if it's too easy or simple, then I lose credibility as an "expert mom" (whatever the heck that means).

Then I finally realized that if you know anything about me, you know that I want to keep things as simple as possible. I'm not about being perfect. I'm about getting it done! The easier, the better.

So, this is a recipe for chicken (seiten or tofu will work, too) that is super simple. I included it as a dump recipe, because you can make several batches and stick it in your fridge. But, because it's so easy, you may just want to make it on the spot.

Here you go:

1 bottle Italian dressing

1 cup Dijon mustard

3-4 lbs. chicken (about 10-12 breasts)

Combine everything and toss it in the slow cooker. This is good over rice with some side veggies. You can also marinate it for a few hours and then toss it on the grill!

Yep, you can use lite or fat-free. However, I would not go fat-free, because the chicken won't be as moist.
I'll keep posting easy recipes! OH, and the leftovers are really good in a salad, too!
