Bacon, Egg and Cheese Muffins

Last week we were snowed in and I made this yummy recipe for my kids. They just loved it! Your family will love it too (and it’s way more yummy than the breakfast sandwiches you get at those fast food restaurants). Get the kids to help with mixing everything together and before you know it you’ll have a delicious start to your day!

2 cups flour
1 tbsp. baking powder
1/2 tsp. salt
pepper to taste
1 beaten egg
1/2 cup mayonnaise
1 cup milk
1 cup grated cheddar cheese
1/2 cup crumbled bacon (or meatless substitute)

Mix first 4 ingredients and make a well in the center. Add egg, mayo and milk to the well and then combine with dry ingredients. Add in cheese and bacon. Pour mixture into muffin pan and cook at 350 for 20 - 25 minutes or until knife inserted comes out clean.

Hannah, just made these this morning and they are sooooo good! Thank you so much for something we can keep in the fridge or feezer for breakfast on the run! I, unfortunately, don't get to stay home, so I need something delicious and healthy and filling to eat for breakfast!

I don't know how you came up with this recipe, but it is so rich and delicious! I didn't have bacon so I used diced ham. AWESOME! Thank you! :o)
