Avocado Pita Pocket

This weekend, I did a ton of yard work (just ask my back muscles!). When I came in for lunch, I was ravenous, but didn't want to just start grabbing junk and eating it. We all know where that can lead! All of a sudden, there you are with an empty bag of nacho-flavored Doritos in one hand and a Twinkie wrapper in the other!

I started searching and found some chickpeas, spinach, radishes, and a ripe avocado in the kitchen window. I pulled some whole wheat pitas out of the bread drawer and I had a scrumptious meal!!

Inside the pita, I layered some baby spinach and sliced radishes. I then sliced up half an avocado and stuck that in there, too. I sprinkled some chickpeas on top and drizzled some homemade honey mustard dressing. To top it all off, I sprinkled some Simply Asia Sweet Ginger Garlic seasoning (a new fave).

Mamas, it was deeeeeeee-licious!

If I could have found a pita as big as my thigh, I would have filled it up and eaten the whole thing! By the way, if you know where I can get pitas that size, I would appreciate you passing along the information.
