Mardi Gras with the Keeleys

We love to celebrate Mardi Gras around our house. I always make a King Cake (and somehow, Klara always manages to be the one who finds the baby) and lots of other yummy food. This year we decided to go with some traditional New Orleans style cuisine by making vegetarian muffuletta with eggplant and cheese. It was so delicious and actually pretty healthy too. Bonus! I liked it so much that I plan to make it next week’s recipe, so stay tuned…
